Ingredients


Here’s what you’ll need to make these delicious cookies:


  • Dry Ingredients:

    • 100g almond flour

    • 100g oat flour

    • 1 tsp baking powder

    • 1 ½ tsp cinnamon

    • 1 tsp ground ginger

    • Pinch of cloves (optional)

    • 75g coconut sugar or brown sugar


  • Wet Ingredients:

    • 60ml maple syrup or honey

    • 60ml melted coconut oil, butter, or olive oil

    • 1 tsp vanilla extract


  • Mix-ins:

    • 50g chopped pecans

    • Optional: 2 tbsp chopped crystallised ginger for extra zing


Instructions


1. Preheat and Prepare


Preheat your oven to 180°C (fan 160°C) or Gas Mark 4, and line a baking tray with baking parchment.


2. Mix the Dry Ingredients


In a large bowl, combine the almond flour, oat flour, baking powder, spices, and sugar.


3. Combine the Wet Ingredients


In a separate bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract. Pour the wet mixture into the dry ingredients and stir until a dough forms.


4. Add the Mix-ins


Fold in the chopped pecans and crystallised ginger (if using) to add texture and flavour.


5. Shape and Bake


Roll the dough into 12 balls, flatten them slightly, and place them on the prepared baking tray. Bake for 10–12 minutes or until the edges are golden brown.


6. Cool and Enjoy
